Simmer and shred the chicken
- Place chicken in the chicken broth and add taco seasoning; simmer at a gentle bubbling for 18-20 minutes until cooked through, then remove the chicken and set aside to shred.
- Reserve the seasoned broth in the pot so it can be returned for the soup base.
Build the soup and simmer
- Return the reserved seasoned broth to the pot and add diced onion, minced garlic, ranch dressing mix, black beans, corn, Rotel tomatoes, and diced tomatoes.
- Bring the soup to a boil, then reduce to a simmer and cook for 10 minutes, stirring occasionally.
Finish with creaminess and serve
- Add the shredded chicken back to the pot and stir until combined.
- If using cream cheese, cube it and stir it in until melted and smooth, keeping the soup at a low simmer.
- Season with salt and pepper to taste, then serve hot with shredded cheddar, sour cream, tortilla chips, lime wedges, and cilantro.
Notes
For the cleanest shredding, let the chicken cool for 5 minutes after simmering, then pull into bite-size pieces before returning to the pot. Refrigerate leftovers in an airtight container up to 4 days; reheat gently on the stove or microwave until steaming. Freezing is not recommended because cream cheese can break slightly upon thawing. For a dairy-light option, skip the cream cheese and instead stir in a spoonful of extra chicken broth for body, keeping toppings like cheddar and sour cream optional.
