  • 1 tortilla chips
  • 1 jalapeños

Equipment

  • 1 Crockpot

Method

Assemble in the crockpot
  1. Add raw chicken breasts, black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, chicken broth, and cream cheese cubes to the Crockpot, then stir everything except the chicken.
  2. Make sure the cream cheese cubes are distributed across the liquid so they can melt evenly during slow cooking.
Slow cook
  1. Cook on Low for 6-8 hours or High for 3-4 hours, until the chicken is tender.
  2. Keep the lid closed during cooking to maintain temperature and prevent heat loss.
Shred and finish creamy
  1. Remove the chicken from the Crockpot and shred it with two forks, then return the shredded chicken to the soup.
  2. Stir until the cream cheese is completely melted and fully incorporated, then stir in the heavy cream.
  3. Season with salt and pepper to taste.
Serve with toppings
  1. Ladle the soup into bowls and top with shredded cheddar, sour cream, tortilla chips, jalapeños, and cilantro.
  2. Serve immediately while warm so the toppings stay crisp where needed.

Notes

For best texture, shred the chicken while it’s hot so it breaks into bite-size strands that distribute evenly. Store leftovers in an airtight container in the refrigerator up to 4 days; freeze up to 2 months, then reheat gently on the stove or in the microwave. For a lighter option, use reduced-fat cream cheese and light heavy cream, keeping the final stirring step the same.
