Ingredients
  

Stir-fry base
  • 1.5 lb sirloin steak slice thin for quick searing
  • 2 bell peppers sliced
  • 1 onion sliced
  • 2 cup corn kernels fresh or thawed frozen
  • 3 tbsp oil for griddle cooking
Savory sauce
  • 0.25 cup soy sauce
  • 2 tbsp BBQ sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 4 cloves garlic minced
  • 0.1 Salt and pepper to taste use to season steak and finish
Garnish
  • 1 green onions for garnish

Method
 

Sear the steak
  1. Heat Blackstone griddle to high heat and add oil, then let it shimmer before adding meat.
  2. Season sirloin steak with salt and pepper and cook for 3-4 minutes until seared, then set aside.
Cook the vegetables
  1. Add bell peppers and onion to the griddle and cook for 5-6 minutes until softened, stirring as needed to prevent scorching.
  2. Add corn kernels and minced garlic, cooking for 2 minutes until fragrant and lightly hot throughout.
Sauce, toss, and finish
  1. Combine soy sauce, BBQ sauce, Worcestershire sauce, and brown sugar, then pour over the vegetables.
  2. Return sirloin steak to the griddle, toss everything together for 2-3 minutes until coated and warmed through.
  3. Garnish with green onions right before serving.

Notes

Pro tip: slice the steak thin and keep griddle heat high so the steak sears quickly instead of steaming. Refrigerate leftovers in an airtight container for up to 3 days; freeze is not recommended because the peppers and corn can soften on thawing. For a lighter option, use low-sugar BBQ sauce and reduce the brown sugar to 1 tbsp while keeping the Worcestershire and soy for flavor.
