Method
Make the batter
- Whisk all-purpose flour, granulated sugar, baking powder, baking soda, salt, and cinnamon, ginger, nutmeg, and cloves in a large bowl.
- Whisk pumpkin puree, whole milk, eggs, melted unsalted butter, molasses, and vanilla extract together until smooth.
- Pour the wet mixture into the dry and fold until just combined; lumps are okay.
- Rest the batter for 5 minutes.
Cook the pancakes
- Heat a well-seasoned griddle or cast iron skillet over medium heat and butter it generously.
- Pour about 1/3 cup batter per pancake and cook until edges are set and bubbles pop across the surface.
- Flip once and cook for 2 minutes more.
Serve
- Serve with a generous pat of butter and real maple syrup.
Notes
For the best texture, fold the batter gently until just combined so the pancakes stay thick and tender. Store leftover pancakes in the refrigerator up to 3 days and reheat in a skillet or toaster until warmed through; freezing is yes—freeze cooled pancakes in a single layer, then bag and reheat from frozen. If you want a dairy-light option, use lactose-free milk or your preferred milk substitute in the same amount (the flavor may vary slightly).
