  • 1 tsp vanilla extract
  • 0.5 cup almond butter or peanut butter

Prep the baking sheets
  1. Line baking sheets with parchment or silicone mats to prevent sticking and help the cookies release cleanly.
Cook the pumpkin syrup base
  1. Combine granulated sugar, whole milk, unsalted butter, and pumpkin puree in a saucepan over medium heat.
  2. Bring the mixture to a rolling boil, keeping the heat at medium and stirring to dissolve sugars.
  3. Boil exactly 1 minute while stirring constantly, watching for a steady rolling boil so the cookies set properly.
Flavor and finish the dough
  1. Remove the saucepan from the heat and stir in pumpkin pie spice, cinnamon, salt, and vanilla extract until evenly combined.
  2. Stir in old-fashioned rolled oats until the mixture thickens and coats the oats.
  3. Fold in almond butter or peanut butter and mix until smooth and uniform.
  4. Stir in white chocolate chips if using, spreading them throughout the dough.
  5. Work quickly and drop the mixture by tablespoons onto the prepared sheets to form neat rounds.
Set the cookies
