Ingredients

Dry mix
  • 2 cup pancake and waffle mix (such as Bisquick or similar)
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tbsp brown sugar
Wet mix
  • 0.5 cup pumpkin puree
  • 1 cup milk or water (as directed on the box)
  • 2 eggs
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
Serving
  • 1 butter
  • 1 maple syrup

Equipment

  • 1 cast iron skillet
  • 1 sheet pan

Method

Mix the dry ingredients
  1. Combine pancake and waffle mix, pumpkin pie spice, cinnamon, and brown sugar in a large bowl, stirring to distribute evenly.
  2. Set aside the dry mixture while you prepare the wet ingredients.
Mix the wet ingredients
  1. Whisk pumpkin puree, milk or water, eggs, vegetable oil, and vanilla extract together until smooth and uniform in color.
Combine batter
  1. Pour the wet ingredients into the dry mix and stir until just combined; the batter should be slightly lumpy.
Cook the pancakes
  1. Heat a greased griddle or skillet over medium heat until hot, then lightly grease if needed.
  2. Pour 1/4 cup batter per pancake and cook until bubbles form and edges look dry, about 2-3 minutes.
  3. Flip the pancakes and cook 1-2 minutes more, until cooked through and lightly golden.
Serve
  1. Serve immediately with butter and warm maple syrup.

Notes

For the best texture, stir the batter gently and stop as soon as the flour disappears—lumps are normal. Store leftover pancakes in the fridge up to 3 days; reheat on a skillet or toaster until warm. Freezing is yes: freeze cooled pancakes in a single layer, then bag and reheat from frozen. For a lighter swap, use low-fat milk or water per the box directions.
