Ingredients
  

For pumpkin pie filling
  • 8 oz cream cheese Softened to room temperature.
  • 0.5 cup pumpkin puree Blotted dry before mixing.
  • 0.33 cup powdered sugar
  • 2 tbsp brown sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 0.25 tsp ginger
  • 1 tsp vanilla
  • 0.75 cup graham cracker crumbs
For coating
  • 12 oz milk or semi-sweet chocolate chips Use whichever you prefer for dipping.
  • 1 tsp coconut oil
  • Graham cracker crumbs For topping; measure as needed.
  • pumpkin pie spice For topping; use a pinch per truffle.

Method
 

Make the pumpkin pie filling
  1. Blot the pumpkin puree dry, then beat the softened cream cheese until smooth.
  2. Add the blotted pumpkin, powdered sugar, brown sugar, pumpkin pie spice, cinnamon, ginger, and vanilla, then beat just until evenly combined.
  3. Fold in the graham cracker crumbs, then refrigerate for 30 minutes until firm.
Shape and chill
  1. Scoop the mixture into 1-inch balls and place them on a tray.
  2. Freeze the truffles for 20 minutes to firm up before dipping.
Dip and finish
  1. Melt the chocolate chips with the coconut oil until smooth.
  2. Dip each frozen truffle in the melted chocolate, then immediately sprinkle with graham cracker crumbs and a pinch of pumpkin pie spice.
  3. Refrigerate the truffles until set.

Notes

For the creamiest centers, blot the pumpkin puree thoroughly before mixing—excess moisture can loosen the filling. Store truffles in an airtight container in the refrigerator for up to 5 days; freeze in a single layer then bag for up to 2 months. For a lighter option, use reduced-fat cream cheese and swap semi-sweet chips for a lower-sugar chocolate.
