Ingredients
  

Whipped feta base
  • 8 oz feta cheese Crumble before blending.
  • 2 tbsp heavy cream
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 0.5 tsp black pepper
Toast and toppings
  • 1 baguette Slice diagonally before toasting.
  • 8 oz fresh strawberries Slice for layering.
  • 2 tbsp pistachios Chop before sprinkling.
  • 1 tbsp fresh basil Tear leaves for garnish.
  • 1 fleur de sel Use a pinch for finishing.

Method
 

Whip the feta
  1. Blend crumbled feta cheese with heavy cream, honey, and lemon juice in a food processor until light and fluffy, about 2 minutes, then season with black pepper.
Toast the baguette
  1. Toast baguette slices under the broiler or in a toaster oven at about 450°F until golden and crispy, about 3 minutes.
Assemble and serve
  1. Spread the whipped feta generously onto each toast.
  2. Top each toast with fresh strawberry slices, then sprinkle with chopped pistachios and torn fresh basil.
  3. Finish with a pinch of fleur de sel and serve immediately while the toast is crisp.

Notes

For the fluffiest whipped feta, stop once it looks pale and aerated rather than blending until it loosens. Assemble right before eating so the baguette stays crisp; leftovers keep in the fridge up to 1 day, but strawberries may weep and toast texture softens. Freezing is not recommended. For a lighter option, swap heavy cream for full-fat Greek yogurt to keep it tangy and creamy with fewer calories.
