  • 1 lb pizza dough
pizza oil and sauce
  • 2 tbsp olive oil For oiling the griddle surface.
  • 1 cup pizza sauce

  • 2 cup mozzarella cheese, shredded Shredded for faster melt.

  • 1 Grated Parmesan cheese For finishing after baking on the griddle.
  • 1 Flour for dusting For dusting and stretching dough.

Equipment

  • 1 griddle
  • 1 pizza stone

Method

Preheat and prep
  1. Heat the Blackstone griddle to medium heat and oil the surface with olive oil.
  2. Divide the pizza dough into 4 portions and stretch each into a thin round, dusting with flour for dusting.
Cook the crust
  1. Place the dough directly on the griddle and cook for 2-3 minutes until the bottom is golden.
Add toppings and melt
  1. Flip the crust and quickly add pizza sauce, mozzarella cheese, shredded, and your choice of toppings to the cooked side.
  2. Cover with a dome or large pan and cook for 3-5 minutes until the cheese melts.
Finish and serve
  1. Remove the pizza from the griddle and top with fresh basil leaves and grated Parmesan cheese, then slice and serve.

Notes

For best blistering, keep the griddle at consistent medium heat—if it runs hot, the crust chars before the cheese fully melts. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat on the griddle or in a skillet for 2-3 minutes. Freezing is not recommended for the best crust texture. If you need a lighter option, use part-skim mozzarella (you’ll still get gooey melt, just with a lower calorie profile).
